When a variety is recognized, it automatically appears in the result of your analysis.
However, sometimes certain grains in the sample cannot be identified. In that case, the result will indicate a "Unrecognized" rate.
Several factors can modify the appearance of grains:

Natural variability from one year to another

Climatic conditions (drought, heavy rain, etc.)

Soil or specific agricultural practices
For example, a period of rain may make grains darker than those the model has learned from in the past.
